ベルリン、ミッテにあるレストランの改修プロジェクト。

当物件は100年ほど前に元々肉屋として作られ、今でも当時のタイル、木製天井のデコレーション、商品を吊るすための鋳鉄のフックなどが残っており、歴史的価値のある保護に関する「Denkmalgeschütztes」に指定されている。そのため床、壁、天井には触れず、必要な家具を作り、空間を再解釈するプロジェクトとなった。

戸建て建築が立ち並ぶ日本の都市空間では間口が狭く、奥行きの長い店舗物件が多く見受けられる。それとは対象的に、ヨーロッパでは街区構成や建物構造の形式上、通りに面するスペースでは間口と奥行きがほぼ同じ長さ、いわば正方形に近く中心性が強い空間がよく見受けられる。それは中心を意識した欧州の都市構成の延長としての内部空間として感じることも多々ある。 この物件もそれに該当していた。

このレストランでは主にタパスのように小皿をメインとした食事が提供されるため、この計画ではそれに相応しいカウンター、家具、空間整理をすることが主な設計条件として求められた。店舗設計でカウンターを設ける場合、一般的な解答として店内の壁に沿って設けることが多いが、前述した正方形に近い空間で壁に沿ってカウンターを設けてしまうと、中央部が導線やレイアウト上、居心地の良いスペースとして使うことは難しいと判断した。 そこでカウンターをU字にし、中央のスペースに押し出すことで、導線を損なうことなく、この空間に相応しいレイアウトと客席構成を確保することができた。

素材、家具の寸法と配置についてはスタディを重ね、慎重に設計を進めた。全ての家具の天板には鏡面加工を施したステンレスを選定し、空間のエレメントが持つ重層的な風景を映り込ませながら、北に面している店に反射して入ってくる淡い光を更に空間全体に拡散させるように意図している。

This property was originally built as a butcher shop about 100 years ago, and still retains historical elements such as the original tiles, wooden ceiling decorations, and cast-iron hooks used for hanging products. It is designated as "Denkmalgeschütztes" (protected historical monument), indicating its historical value. Therefore, the floors, walls, and ceiling remained untouched, making this primarily a project focused on creating necessary furniture and reinterpreting the space.

In Japanese urban spaces lined with detached buildings, retail properties typically have narrow frontage and long depth. In contrast, European spaces, due to their block composition and building structure, often feature spaces facing the street where the frontage and depth are nearly equal in length, creating almost square spaces with strong centrality. This can be experienced as an interior space that extends from Europe's centrality-conscious urban composition. This property was one such example.

Since the restaurant primarily serves small plates like tapas, the main design requirements were to create appropriate counters, furniture, and spatial organization. When designing restaurant counters, a common solution is to place them along the walls. However, in this nearly square space, placing the counter along the wall would make it difficult to use the central area as a comfortable space in terms of traffic flow and layout. Therefore, by creating a U-shaped counter and pushing it into the central space, we were able to secure an appropriate layout and seating arrangement without compromising circulation.

Materials, furniture dimensions, and placement were carefully studied and designed. Mirror-finished stainless steel was selected for all furniture tops, intentionally reflecting the layered scenery of spatial elements while diffusing the soft northern light that reflects into the store throughout the entire space.
